Ingredients

  • 3 whole Garlic bulbs
  • 3 tablespoons Olive oil
  • 1 medium Onion
  • 3 cups White beans (cooked or canned, drained and rinsed)
  • 4 cups Vegetable broth
  • 1 teaspoon Fresh thyme (optional, plus extra for garnish if desired)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Lemon juice
  • 4 slices Crusty bread (for serving, optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Trim the tops of the garlic bulbs to expose some of the cloves. Drizzle them with 1 tablespoon of olive oil, then wrap each bulb in aluminum foil. Roast them in the oven for 35-40 minutes, or until they are soft and golden.

While the garlic is roasting, dice the onion. Heat 2 tablespoons of olive oil in a large pot over medium heat, then sauté the onion until it is translucent and softened, about 5-7 minutes.

Add the white beans and vegetable broth to the pot. Stir in the thyme, salt, and black pepper. Reduce the heat to low and simmer for 10 minutes to allow the flavors to meld together.
