Ingredients

  • 1 pound raw shrimp (peeled and deveined)
  • 2 cups cherry tomatoes (halved)
  • 0.5 cup fresh basil leaves (chopped)
  • 3 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 tablespoon lemon juice
  • 0.25 teaspoon red pepper flakes
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup parmesan cheese (optional, grated)

Directions

Step 1

Rinse and pat dry the shrimp. Season with salt and pepper and set aside.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and red pepper flakes, cooking for 1-2 minutes until fragrant.

Step 3

Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side, then flip and cook for an additional 2-3 minutes, until the shrimp are pink and opaque. Transfer the cooked shrimp to a plate and set aside.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil and the halved cherry tomatoes. Sauté for 2-3 minutes until the tomatoes start to soften and release their juices.

Step 5

Add the fresh basil and stir into the tomatoes. Cook for another 1-2 minutes until fragrant.

Step 6

Return the cooked shrimp to the skillet and drizzle with lemon juice. Toss everything together until well combined and heated through, about 1 minute.

Step 7

Serve immediately, garnished with optional grated parmesan cheese if desired. Enjoy with crusty bread, pasta, or rice.
