Ingredients

  • 12 oz linguine or spaghetti pasta
  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 6 garlic cloves, minced
  • 0.5 tsp red pepper flakes
  • 2 tbsp fresh lemon juice
  • 0.5 cup dry white wine or chicken broth
  • 2 tbsp fresh parsley, chopped
  • 0.25 cup grated Parmesan cheese
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the pasta and set aside.

Step 2

While the pasta cooks, heat the olive oil and 1 tablespoon of butter in a large skillet over medium heat.

Step 3

Add the minced garlic and red pepper flakes to the skillet, cooking for about 1 minute until fragrant, being careful not to burn the garlic.

Step 4

Add the shrimp to the skillet in a single layer. Season with salt and black pepper. Cook for 2-3 minutes per side, until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

Step 5

Deglaze the skillet by adding the white wine (or chicken broth) and fresh lemon juice. Scrape up any browned bits from the bottom of the pan. Simmer for 1-2 minutes to reduce slightly.

Stir in the chopped parsley and sprinkle with grated Parmesan cheese. Adjust seasoning with additional salt and pepper, if needed.
