Ingredients

  • 1 lb Large sea scallops
  • 8 oz Angel hair pasta
  • 3 tbsp Unsalted butter
  • 2 tbsp Olive oil
  • 4 cloves Garlic cloves, minced
  • 0.5 cup Chicken broth
  • 2 tbsp Fresh lemon juice
  • 2 tbsp Fresh parsley, chopped
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 cup Parmesan cheese, grated (optional)

Directions

Step 1

Pat the scallops dry with a paper towel. Season them with 1/4 teaspoon of salt and 1/8 teaspoon of black pepper.

Step 2

Cook the angel hair pasta according to package instructions. Drain, reserve 1/2 cup of pasta water, and set aside.

Step 3

In a large skillet over medium-high heat, add 1 tablespoon of butter and 1 tablespoon of olive oil. Once the pan is hot, add the scallops in a single layer. Cook for 2-3 minutes without moving them until browned on one side, then flip and cook for another 2 minutes. Remove scallops from the skillet and set aside.

Step 4

Lower the heat to medium. Add the remaining tablespoon of olive oil and minced garlic to the skillet. Sauté for 30 seconds until fragrant, being careful not to burn the garlic.

Step 5

Deglaze the skillet by adding the chicken broth and fresh lemon juice. Stir to scrape up any browned bits from the pan and let the liquid reduce slightly, about 2 minutes.

Step 6

Add the cooked pasta to the skillet along with the reserved pasta water and the remaining 2 tablespoons of butter. Toss until the pasta is coated in the sauce.

Return the scallops to the skillet and sprinkle with chopped parsley. Simmer for an additional 1-2 minutes to warm through.

Step 8

Taste and season with additional salt and black pepper if needed.
