Ingredients

  • 4 pieces pork chops (bone-in or boneless)
  • 2 sprigs fresh rosemary
  • 4 cloves garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon lemon juice
  • 0.25 cup chicken broth (optional)

Directions

Step 1

Pat the pork chops dry with paper towels, then season both sides with salt and ground black pepper.

Step 2

Heat a large skillet over medium-high heat and add olive oil.

Step 3

Once the oil is hot, place the pork chops in the skillet and sear for 3-4 minutes on each side, or until golden brown. Remove the chops and set aside.

Step 4

Lower the heat to medium and add the butter to the skillet. Once the butter has melted, stir in the minced garlic and rosemary sprigs, cooking for 1 minute until fragrant.

Step 5

Return the pork chops to the skillet, spooning the garlic-rosemary butter over them. Continue cooking for 4-5 minutes, turning the chops occasionally, until they reach an internal temperature of 145°F (63°C).

Step 6

If desired, add chicken broth and lemon juice to the skillet in the last minute of cooking to create a light pan sauce.

Step 7

Remove the skillet from heat, discard the rosemary sprigs, and let the pork chops rest for 2 minutes before serving.

Step 8

Serve immediately with your favorite sides, such as roasted vegetables or mashed potatoes.
