Ingredients

  • 2 pounds Russet potatoes
  • 6 pieces Garlic cloves
  • 1 tablespoon (chopped) Fresh rosemary
  • 4 tablespoons Unsalted butter
  • 0.5 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Olive oil

Directions

Step 1

Peel the potatoes and cut them into roughly 1- to 2-inch cubes for even cooking.

Step 2

Place the potatoes in a large pot and cover with cold water. Add 1 teaspoon of salt to the water and bring to a boil over medium-high heat.

Step 3

While the potatoes are boiling, prepare the roasted garlic. Place the garlic cloves on a small sheet of foil, drizzle with olive oil, and wrap them tightly. Roast in a preheated oven at 375°F (190°C) for 15 minutes, or until softened.

Step 4

Once the potatoes are fork-tender (about 15-20 minutes of boiling), drain them thoroughly and return them to the pot.

Step 5

Mash the potatoes using a potato masher or ricer until smooth and lump-free.

Step 6

In a small saucepan, heat the butter, heavy cream, and chopped rosemary over low heat until warmed through and fragrant (about 2-3 minutes).

Step 7

Mash or finely chop the roasted garlic, then stir it into the butter and cream mixture.

Step 8

Gradually pour the butter and cream mixture into the mashed potatoes, stirring until fully incorporated and creamy.

Step 9

Season the mashed potatoes with black pepper and additional salt to taste.

Step 10

Serve warm, garnished with a sprig of rosemary or a drizzle of olive oil if desired. Enjoy!
