Ingredients

  • 1 pound Fresh green beans
  • 4 pieces Garlic cloves
  • 4 sprigs Dill sprigs
  • 1 teaspoon Mustard seeds
  • 0.5 teaspoon Red pepper flakes
  • 1 teaspoon Black peppercorns
  • 1.5 cups White distilled vinegar
  • 1.5 cups Water
  • 2 tablespoons Kosher salt
  • 1 tablespoon Granulated sugar

Directions

Step 1

Wash and trim the ends of the green beans. Set them aside.

Step 2

Sterilize a quart-sized mason jar, or equivalent heatproof jar, by rinsing it with boiling water. Let it air dry.

Step 3

Peel the garlic cloves and set them aside.

Step 4

In a medium saucepan, combine the vinegar, water, kosher salt, and sugar. Bring the mixture to a simmer over medium heat, stirring to dissolve the salt and sugar completely. Remove from heat once the mixture reaches a simmer.

Step 5

Place the dill sprigs, garlic cloves, mustard seeds, red pepper flakes, and black peppercorns into the mason jar.

Step 6

Tightly pack the green beans vertically into the jar, trimming them as needed to fit just below the jar’s rim.

Step 7

Pour the hot brine over the green beans, ensuring all the beans are fully submerged. Leave about 1/2 inch of headspace at the top of the jar.

Step 8

Tap the jar gently on the counter to release air bubbles, and use a clean utensil (like a butter knife) to remove trapped bubbles if necessary.

Step 9

Seal the jar tightly with its lid and let it cool to room temperature before storing it in the refrigerator.

Step 10

Allow the green beans to pickle for at least 48 hours before enjoying to develop optimal flavor. They can be stored in the fridge for up to 2-3 weeks.
