Ingredients

  • 12 oz linguine pasta
  • 10 oz Italian sausage (mild or spicy, casings removed)

  • 4 cloves garlic cloves, minced
  • 1 medium red onion, finely diced
  • 1 medium red bell pepper, thinly sliced
  • 1 tsp black pepper, freshly ground
  • 0.5 tsp red chili flakes (optional, for heat)
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 2 tbsp parsley, freshly chopped (for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the linguine pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2

Heat a large skillet over medium heat. Add 1 tablespoon of olive oil. Crumble the sausage into the skillet and cook until browned and cooked through, about 6–7 minutes. Remove the sausage with a slotted spoon and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the minced garlic, diced red onion, and sliced red bell pepper until softened and fragrant, about 3–4 minutes.

Season the vegetable mixture with black pepper and red chili flakes (if using). Stir to combine.
