Ingredients

  • 250 grams Pasta (fusilli or rotini)
  • 100 grams Pecans
  • 4 pieces Garlic cloves
  • 4 tablespoons Olive oil
  • 2 tablespoons Fresh parsley
  • 2 tablespoons Lemon juice
  • 1 teaspoon Honey
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 150 grams Cherry tomatoes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

While the pasta cooks, toast the pecans in a dry skillet over medium heat for 2-3 minutes, stirring frequently until fragrant. Remove from heat and set aside.

Peel the garlic cloves and finely mince them. In a small skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until lightly golden and fragrant. Remove from heat and let cool.
