  • 2 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic cloves, minced
  • 8 ounces mushrooms, sliced
  • 0.5 cup dry white wine
  • 0.5 cup chicken broth
  • 0.25 cup heavy cream
  • 4 cups fresh baby spinach
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Season the chicken breasts on both sides with salt, pepper, and garlic powder.

Step 2

In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear for 4-5 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Lower the heat to medium and add the butter to the same skillet. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant.
