Ingredients

  • 4 large Russet potatoes
  • 4 tablespoons Unsalted butter
  • 3 large Garlic cloves
  • 1 cup Milk
  • 1 cup Heavy cream
  • 1.5 cups Sweet corn kernels (fresh, canned, or frozen)
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Ground black pepper
  • 1 tablespoon Chopped fresh parsley (optional)

Directions

Step 1

Peel the potatoes and chop them into equal-sized chunks to ensure even cooking.

Step 2

Add the chopped potatoes to a large pot and cover them with cold water. Add 1 teaspoon of salt to the water.

Step 3

Bring the pot to a boil over medium-high heat, then reduce the heat to a simmer. Cook the potatoes for 15-20 minutes, or until they are fork-tender.

Step 4

While the potatoes are boiling, mince the garlic finely.

Step 5

In a small saucepan, melt 2 tablespoons of butter over medium-low heat. Add the minced garlic and sauté it for about 1-2 minutes, or until fragrant. Be careful not to burn the garlic.

Step 6

If using fresh or frozen corn, cook the kernels in boiling water for 3-5 minutes until tender. If using canned corn, drain and rinse before use. Set the corn aside.

Step 7

Drain the cooked potatoes and return them to the pot. Let them sit for 1-2 minutes to allow excess moisture to evaporate.

Step 8

Add the remaining 2 tablespoons of butter, sautéed garlic, milk, heavy cream, and 0.5 teaspoon of salt to the pot. Mash everything together using a potato masher or a handheld mixer, until smooth and creamy. Adjust the consistency by adding more milk, if needed.

Step 9

Fold the corn kernels gently into the mashed potatoes using a spatula. Taste and season with additional salt and pepper, if desired.

Step 10

Transfer the garlic mashed potatoes with corn to a serving bowl. Garnish with freshly chopped parsley, if desired, and serve warm.
