Ingredients

  • 400 grams spaghetti
  • 8 cloves garlic
  • 0.33 cup extra virgin olive oil
  • 0.5 teaspoon crushed red pepper flakes
  • 2 tablespoons unsalted butter
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.25 teaspoon black pepper, freshly cracked
  • 0.5 cup pasta cooking water

Directions

Step 1

Fill a large pot with water, add 1 teaspoon of salt, and bring it to a boil over high heat.

Step 2

While the water is heating, peel and thinly slice the garlic cloves.

Step 3

Cook the spaghetti in the boiling water according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water before draining the pasta.

Step 4

In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden and fragrant, about 2-3 minutes. Be careful not to burn the garlic.

Step 5

Sprinkle the red pepper flakes into the skillet and stir for 30 seconds to release the spice's aroma.

Step 6

Lower the heat to medium-low and stir in the unsalted butter until melted.

Step 7

Add the drained spaghetti to the skillet and toss to coat it in the garlic oil mixture.

Step 8

Pour in the reserved pasta cooking water, a little at a time, and toss until the pasta is evenly coated and glossy.

Step 9

Stir in the grated Parmesan cheese, parsley, black pepper, and adjust seasoning with additional salt if needed.

Step 10

Serve immediately, garnished with extra Parmesan and parsley if desired.
