Ingredients

  • 12 oz Fettuccine pasta
  • 4 tbsp Olive oil
  • 8 cloves Garlic cloves (thinly sliced)
  • 2 pieces Zucchini (medium, thinly sliced into half-moons)
  • 0.5 tsp Red pepper flakes
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 0.5 cup Parmesan cheese (grated, optional)
  • 2 tbsp Fresh parsley (chopped, optional)
  • 0.5 cup Reserved pasta water

Directions

Step 1

Fill a large pot with water, add a generous pinch of salt, and bring it to a boil. Cook the fettuccine according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining the pasta.

Step 2

While the pasta is cooking, heat olive oil in a large skillet over medium heat.

Step 3

Add the thinly sliced garlic to the skillet and sauté until it turns golden and fragrant, about 1-2 minutes. Be careful not to burn the garlic.

Step 4

Add the zucchini slices to the skillet and sauté for 5-7 minutes until tender yet slightly crisp. Stir occasionally.

Step 5

Sprinkle in the red pepper flakes, salt, and black pepper, stirring well to coat the zucchini evenly.

Step 6

Reduce the heat to low and add the drained fettuccine to the skillet. Toss to combine the pasta with the zucchini and garlic.

Step 7

Gradually add the reserved pasta water, a few tablespoons at a time, to create a light sauce that coats the pasta. Toss gently after each addition.

Step 8

Taste and adjust the seasoning with extra salt or pepper if needed.

Step 9

Serve immediately, garnished with grated Parmesan cheese and fresh parsley, if desired.
