Ingredients

  • 4 pieces bone-in, skin-on chicken thighs
  • 500 g baby potatoes
  • 4 pieces carrots
  • 8 pieces garlic cloves
  • 3 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 sprigs fresh rosemary
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp lemon juice

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the baby potatoes and carrots. Halve the potatoes and peel and chop the carrots into similar-sized pieces for even cooking.

Step 3

Pat the chicken thighs dry with paper towels and season both sides with 1/2 tsp of salt, 1/4 tsp of black pepper, and the paprika.

Step 4

Peel and mince 4 of the garlic cloves, and leave the remaining 4 cloves whole but lightly crushed with the side of a knife.

Step 5

In a large oven-safe skillet or baking dish, combine the potatoes, carrots, minced garlic, and whole garlic cloves. Drizzle with 2 tablespoons of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Toss to coat evenly.

Step 6

Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken thighs skin-side down and sear for 3-4 minutes until the skin is golden and crispy. Flip and sear the other side for 2 minutes. Remove from the pan.
