In a large bowl, mix together 3 1/2 cups of all-purpose flour, 1 tablespoon of sugar, 1 teaspoon of salt, and 2 1/4 teaspoons of instant yeast.
Add 1 1/4 cups of warm water and 2 tablespoons of olive oil to the dry ingredients. Stir until a rough dough forms.
Turn the dough onto a lightly floured surface and knead for about 8-10 minutes until the dough becomes smooth and elastic.
Place the dough in a lightly oiled bowl, cover it with plastic wrap or a damp towel, and let it rise in a warm place for about 1 to 1 1/2 hours, or until doubled in size.
Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
Once the dough has risen, punch it down and divide it into 24 equal pieces.
Roll each piece of dough into a rope about 8 inches long and tie it into a knot. Place the knots onto the prepared baking sheets, leaving some space in between.

Remove from heat and stir in 2 tablespoons of chopped fresh parsley and a pinch of salt.
Once the knots are done baking, remove them from the oven and immediately brush them generously with the garlic butter.
