Ingredients

  • 3 pounds beef sirloin roast
  • 6 cloves garlic cloves, minced
  • 3 tablespoons prepared horseradish
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 1 cup beef stock
  • 0.5 cup red wine (optional)

Directions

Step 1

Preheat your oven to 450°F (232°C).

Step 2

In a small bowl, mix together the minced garlic, prepared horseradish, olive oil, rosemary, thyme, salt, and pepper to make a paste.

Step 3

Pat the sirloin roast dry with paper towels and place it on a roasting rack in a roasting pan.

Step 4

Rub the garlic-horseradish paste evenly over the entire surface of the roast.

Step 5

Add the beef stock and optional red wine to the bottom of the roasting pan to prevent drippings from burning and to create a base for the sauce.

Step 6

Place the roast in the preheated oven and cook at 450°F (232°C) for 15 minutes to sear the outside.

Step 7

Reduce the oven temperature to 325°F (163°C) and continue roasting for approximately 60-75 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare or 145°F (63°C) for medium doneness.

Step 8

Remove the roast from the oven, cover loosely with aluminum foil, and let it rest for 15 minutes before slicing to allow the juices to redistribute.

Step 9

While the roast is resting, strain the pan drippings into a small saucepan and bring to a simmer. Adjust seasoning if needed and serve as a sauce alongside the roast.

Step 10

Slice the roast against the grain and serve warm with the sauce and your choice of sides.
