Ingredients

  • 2 pounds Russet potatoes
  • 4 whole Garlic cloves
  • 4 tablespoons Unsalted butter
  • 0.5 cups Heavy cream
  • 2 tablespoons Fresh parsley
  • 1 tablespoon Fresh thyme
  • 1 teaspoon Fresh rosemary
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 1 teaspoon Olive oil
  • 0.25 cups Parmesan cheese (optional)

Directions

Step 1

Peel the potatoes and cut them into evenly sized chunks (about 2 inches each).

Step 2

Fill a large pot with water and add 1 teaspoon of salt. Place the potatoes in the pot and bring it to a boil over medium-high heat.

Step 3

Lower the heat to a simmer and cook the potatoes for 15-20 minutes or until they are fork-tender.

Step 4

While the potatoes are boiling, peel the garlic cloves and place them in a small saucepan with 1 teaspoon of olive oil. Cook over low heat for 5-7 minutes, stirring occasionally, until the garlic is soft and fragrant. Remove from heat and set aside.

Step 5

Once the potatoes are cooked, drain them in a colander. Return the pot to the stovetop and set it over low heat for 1-2 minutes to evaporate any excess moisture from the potatoes.

Step 6

In the same pot, mash the potatoes with a potato masher or pass them through a potato ricer for an extra-smooth texture.

Step 7

Add the softened garlic cloves, unsalted butter, and heavy cream to the potatoes. Stir until the mixture is creamy and smooth.

Step 8

Chop the fresh parsley, thyme, and rosemary finely, then fold them into the mashed potatoes.

Step 9

Season the mashed potatoes with salt and ground black pepper. Taste and adjust the seasoning as needed.

Step 10

If desired, stir in Parmesan cheese for added flavor.

Step 11

Serve the mashed potatoes warm, garnished with a sprinkle of fresh herbs, and enjoy!
