Ingredients

  • 2 pounds russet potatoes
  • 6 garlic cloves, peeled
  • 4 tablespoons unsalted butter
  • 0.5 cups heavy cream
  • 0.25 cups milk
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Peel the potatoes and cut them into evenly sized chunks (roughly 2-inch pieces).

Step 2

Place the potatoes in a large pot and cover them with cold water. Add a pinch of salt to the water.

Step 3

Bring the water to a boil over high heat. Reduce to medium-high and simmer for 15-20 minutes, or until the potatoes are fork-tender.

Step 4

While the potatoes are boiling, preheat a small skillet over low heat. Add the olive oil and garlic cloves.

Step 5

Roast the garlic in the skillet, stirring occasionally, for 8-10 minutes until golden brown and aromatic. Remove from heat and set aside.

Step 6

Drain the cooked potatoes in a colander and return them to the pot.

Step 7

Mash the potatoes using a potato masher or ricer to your desired consistency.

Step 8

In a small saucepan, combine heavy cream, milk, and butter. Heat over medium-low heat until the butter is melted and the mixture is warm.

Step 9

Pour the warm cream mixture over the mashed potatoes and stir to combine.

Step 10

Add the roasted garlic, salt, pepper, parsley, and thyme to the potatoes. Mix well until evenly combined.

Step 11

Taste and adjust seasoning with more salt or pepper, if needed.

Step 12

Serve the mashed potatoes warm, garnished with additional parsley if desired.
