Ingredients

  • 450 grams haricots verts (French green beans)
  • 60 grams slivered almonds
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic cloves, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon kosher salt
  • 0.5 teaspoons black pepper, freshly ground

Directions

Step 1

Trim the ends off the haricots verts and rinse them under cold water. Pat dry with a clean kitchen towel.

Step 2

Bring a large pot of water to a boil. Add a generous pinch of salt. Blanch the haricots verts by boiling them for 2-3 minutes until bright green and tender-crisp.

Step 3

Drain the beans and immediately plunge them into a bowl of ice water to stop the cooking process. Drain again and set aside.

Step 4

In a large skillet, heat the olive oil and butter over medium heat until the butter is melted and slightly foaming.

Step 5

Add the slivered almonds to the skillet. Toast them, stirring frequently, for 3-4 minutes, or until they’re golden brown and fragrant. Be careful not to burn them.

Step 6

Add the minced garlic to the skillet and sauté for 1 minute, stirring constantly, until fragrant.

Step 7

Toss the blanched haricots verts into the skillet with the almonds and garlic. Stir gently to coat the beans evenly.

Step 8

Season the dish with kosher salt, freshly ground black pepper, and drizzle with lemon juice.

Step 9

Cook for another 2-3 minutes until the beans are warmed through. Adjust the seasoning to taste if needed.

Step 10

Transfer to a serving dish and serve immediately as a side to your favorite meal.
