Ingredients

  • 8 oz Goat cheese
  • 4 oz Cream cheese
  • 1 whole bulb Garlic
  • 2 tbsp Olive oil
  • 1 tbsp Lemon juice
  • 2 tbsp Fresh parsley
  • 1 tsp Fresh thyme
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Heavy cream (optional, for consistency)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Cut off the top of the garlic bulb to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap in aluminum foil.

Step 3

Roast the garlic in the oven for 30-35 minutes, or until the cloves are soft and caramelized. Allow to cool.

Step 4

In a medium mixing bowl, combine the goat cheese, cream cheese, lemon juice, remaining olive oil, salt, and black pepper.

Step 5

Squeeze the roasted garlic cloves out of their skins and mash them into a paste using a fork. Add to the cheese mixture.

Step 6

Chop the parsley and thyme finely, then stir them into the dip.

Step 7

Mix everything until smooth. If the dip is too thick, add heavy cream, 1 tablespoon at a time, until the desired consistency is achieved.

Step 8

Taste and adjust seasoning if needed.
