Ingredients

  • 12 pieces frog’s legs
  • 6 cloves whole garlic
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 0.5 cup all-purpose flour
  • 1 whole lemon
  • 2 tablespoons fresh parsley
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.25 cup dry white wine

Directions

Step 1

Rinse the frog’s legs under cold water and pat them dry with paper towels.

Step 2

Season the legs with salt and black pepper on both sides.

Step 3

Place the flour on a shallow plate and lightly dredge the frog’s legs in the flour, shaking off any excess. Set aside.

Step 4

Peel and finely mince the garlic cloves. Finely chop the fresh parsley and set both aside for later.

Step 5

Heat a large skillet over medium heat and add 2 tablespoons of olive oil. Once the oil is hot, add the butter and allow it to melt completely.

Step 6

Place the dredged frog’s legs in the skillet, being careful not to overcrowd the pan. Sear the legs for 3-4 minutes on each side, or until they are golden brown and cooked through. Remove them from the skillet and set them on a plate lined with paper towels to drain.

Step 7

In the same skillet, add the minced garlic and sauté for 1-2 minutes, or until fragrant but not browned.

Step 8

Deglaze the skillet by pouring in the dry white wine, scraping up any browned bits on the bottom of the pan.

Step 9

Reduce the heat to low and let the wine simmer for 1-2 minutes, then stir in 2 more tablespoons of butter until a silky sauce forms.

Step 10

Return the frog’s legs to the skillet and toss them gently to coat in the garlic butter sauce.

Step 11

Remove the skillet from heat and sprinkle the dish with the chopped parsley for a pop of freshness.

Step 12

Squeeze the juice of one lemon over the frog's legs just before serving to enhance the flavors.

Step 13

Serve immediately with crusty bread or alongside a simple green salad and enjoy!
