Ingredients

  • 12 ounces fettuccine pasta
  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic cloves, minced
  • 1 cup heavy cream
  • 3 ounces grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the fettuccine pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Step 2

While the pasta cooks, season the chicken breasts with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper on both sides.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-6 minutes per side, or until fully cooked with an internal temperature of 165°F (74°C). Remove the chicken from the skillet and let it rest for 5 minutes before slicing into thin strips.
