Ingredients

  • 1 whole Baguette
  • 4 tablespoons Extra virgin olive oil
  • 2 cloves Garlic cloves
  • 2 medium Ripe tomatoes
  • 100 grams Manchego cheese
  • 5 leaves Fresh basil leaves
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the baguette diagonally into 1/2-inch thick pieces to create 12-15 slices.

Step 3

Place the slices on a baking sheet and brush both sides with 2 tablespoons of olive oil.

Step 4

Toast the bread in the oven for 5 minutes, then flip and bake for another 3-5 minutes until golden and crisp.

While the bread is toasting, peel and finely mince the garlic cloves.

Dice the ripe tomatoes into small cubes and place them in a bowl. Add 2 tablespoons of olive oil, salt, and black pepper. Mix well and set aside.
