Ingredients

  • 300 g green beans
  • 250 g cherry tomatoes
  • 1 medium loaf day-old baguette
  • 4 tbsp extra virgin olive oil
  • 2 large garlic cloves
  • 1 small red onion
  • 2 tbsp fresh flat-leaf parsley
  • 2 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Trim the ends off the green beans and blanch them in boiling salted water for 3-4 minutes until tender-crisp. Drain and immediately plunge them into a bowl of ice water to stop the cooking process. Drain again and set aside.

Step 3

Slice the baguette into 2 cm (¾ inch) cubes to make croutons. Spread them on a baking sheet.

Step 4

Mince the garlic cloves and mix them with 3 tbsp of olive oil in a small bowl. Drizzle this mixture over the bread cubes, tossing to coat evenly.

Step 5

Bake the garlic bread cubes in the preheated oven for 10-12 minutes, flipping halfway, until golden and crispy. Remove from the oven and let cool.

Step 6

Halve the cherry tomatoes and finely slice the red onion. Roughly chop the parsley.

Step 7

In a large salad bowl, whisk together the apple cider vinegar, Dijon mustard, remaining 1 tbsp of olive oil, salt, and black pepper to make the dressing.

Step 8

Add the green beans, cherry tomatoes, and red onion to the bowl. Toss well to coat the vegetables in the dressing.

Step 9

Just before serving, fold in the garlic bread croutons and sprinkle with fresh parsley. Toss gently to combine.
