Ingredients

  • 2 pounds Yukon Gold potatoes
  • 6 pieces Garlic cloves
  • 6 tablespoons Unsalted butter
  • 0.5 cups Heavy cream
  • 0.5 cups Milk
  • 0.75 cups Asiago cheese, grated
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel the garlic cloves and place them on a piece of aluminum foil. Drizzle with olive oil, wrap them tightly in the foil, and roast in the oven for 15-20 minutes, or until soft and fragrant.

Step 3

While the garlic roasts, peel and chop the Yukon Gold potatoes into evenly sized chunks (about 2 inches).

Step 4

Place the potatoes in a large pot and cover them with cold, salted water. Bring to a boil over high heat, then reduce to a simmer. Cook the potatoes for 15-20 minutes, or until they are fork-tender.
