Ingredients

  • 4 pieces (boneless, skinless) chicken breasts
  • 500 grams baby potatoes
  • 3 tablespoons olive oil
  • 4 pieces (minced) garlic cloves
  • 10 pieces (roughly chopped) fresh sage leaves
  • 250 milliliters chicken broth
  • 2 tablespoons unsalted butter
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon (optional) red chili flakes

Directions

Step 1

Rinse the baby potatoes and cut them into halves or quarters, depending on their size, to create even pieces.

Step 2

Season the chicken breasts with a light sprinkling of salt and black pepper on both sides.

Step 3

Heat 2 tablespoons of olive oil in a large, heavy-bottomed skillet over medium-high heat.

Step 4

Sear the chicken breasts in the hot skillet for 3-4 minutes per side until golden brown. Remove the chicken from the skillet and set aside on a plate.

Step 5

In the same skillet, add the remaining 1 tablespoon of olive oil and the halved potatoes. Stir and cook for about 5 minutes, letting the potatoes start to get crispy and lightly browned.

Step 6

Lower the heat to medium. Add the minced garlic to the skillet and sauté for 1 minute, being careful to not let it burn.

Step 7

Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet to deglaze the pan.

Step 8

Add the chopped fresh sage, unsalted butter, lemon juice, and optional red chili flakes. Stir gently to combine.

Step 9

Return the chicken breasts to the skillet, nestling them among the potatoes. Cover with a lid and let everything simmer on medium heat for 18-20 minutes, or until the chicken is cooked through and the potatoes are tender.

Step 10

Uncover and cook for an additional 5 minutes to let the sauce reduce slightly, allowing the flavors to concentrate.

Step 11

Taste and adjust seasoning, adding more salt and pepper, if necessary.

Step 12

Serve the garlic and sage chicken and potato sauté hot, garnished with a few additional sage leaves for presentation if desired.
