Ingredients

  • 2 pounds Russet potatoes
  • 6 pieces Garlic cloves
  • 4 tablespoons Unsalted butter
  • 0.5 cup Heavy cream
  • 0.25 cup Milk
  • 1 tablespoon Olive oil
  • 1 teaspoon Fresh rosemary
  • 1 teaspoon Fresh thyme
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Peel the russet potatoes and cut them into evenly sized chunks, about 2 inches wide.

Step 2

Place the potatoes in a large pot and cover with cold water. Add 1 teaspoon of salt to the water.

Step 3

Bring the pot to a boil over medium-high heat, then reduce to a simmer. Cook for 15-20 minutes, or until the potatoes are tender when pierced with a fork.

While the potatoes cook, peel the garlic cloves and place them on a small piece of foil. Drizzle with olive oil, then wrap the foil tightly to make a pouch.

Place the garlic pouch in a preheated oven at 400°F (200°C) and roast for 15 minutes, or until the cloves are soft and fragrant.
