Ingredients

  • 2 pounds russet potatoes
  • 1 piece whole garlic bulb
  • 4 tablespoons unsalted butter
  • 1 cup heavy cream
  • 0.5 cup milk
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon olive oil
  • 1 tablespoon fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice off the top of the garlic bulb, exposing the tops of the cloves. Drizzle with 1 teaspoon of olive oil and wrap in aluminum foil. Roast in the oven for 30-35 minutes, or until the cloves are soft and golden brown. Allow to cool slightly.

Step 3

While the garlic roasts, peel and cut the potatoes into even chunks. Place them in a large pot and cover with cold water. Add 1 teaspoon of salt to the water.

Step 4

Bring the pot to a boil over high heat. Reduce the heat to medium and simmer for 15-20 minutes, or until the potatoes are fork-tender.

Drain the potatoes and return them to the pot. Allow them to sit for 1-2 minutes to evaporate any excess moisture.

Squeeze the roasted garlic cloves out of their skins and mash them into a paste.

In a small saucepan over low heat, combine the butter, heavy cream, and milk. Heat until warm, but do not boil.

Using a potato masher, mash the potatoes until smooth and free of lumps. Gradually stir in the warm cream mixture and roasted garlic paste until the desired consistency is reached.

Season with additional salt and ground black pepper to taste.

Transfer the mashed potatoes to a serving bowl and garnish with chopped fresh parsley if desired. Serve immediately.
