Ingredients

  • 2 pieces (10-12 oz each) rib eye steaks
  • 4 cloves garlic cloves
  • 2 tablespoons coarse black pepper
  • 1 tablespoon kosher salt
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 sprigs fresh rosemary sprigs
  • 2 sprigs fresh thyme sprigs

Directions

Step 1

Place the rib eye steaks on a plate and allow them to come to room temperature (about 20-30 minutes).

Step 2

Mince the garlic cloves finely or crush them into a paste using the flat side of a knife.

Step 3

Pat the steaks dry with paper towels and season both sides generously with kosher salt, coarse black pepper, and the minced garlic. Press the seasonings into the meat so they adhere.

Step 4

Heat a large cast-iron skillet over medium-high heat until very hot, about 3-4 minutes.

Step 5

Add the olive oil to the skillet and swirl to coat.

Step 6

Carefully place the steaks in the skillet and sear for 3-4 minutes on the first side without moving them, until a deep brown crust forms.

Step 7

Flip the steaks and sear for another 3-4 minutes on the second side.

Step 8

Reduce the heat to medium, add the butter, rosemary sprigs, and thyme sprigs to the skillet.

Step 9

Tilt the skillet slightly to pool the butter, and using a spoon, baste the steaks with the melted herb-infused butter for about 1-2 minutes.

Step 10

Check the internal temperature of the steaks with a meat thermometer: 125°F for rare, 135°F for medium-rare, 145°F for medium (adjust cooking time as needed).

Step 11

Transfer the steaks to a plate and tent loosely with aluminum foil. Let them rest for 5-7 minutes to redistribute the juices.

Step 12

Serve immediately, optionally garnished with the sprigs of rosemary and thyme from the skillet.
