Preheat your oven to 425°F (220°C).
Rinse the whole chicken thoroughly under cold water and pat it dry with paper towels. Remove any giblets if present.
Using clean hands, gently loosen the skin of the chicken by sliding your fingers between the skin and the breast meat without tearing it.
Peel and mince 4 garlic cloves, then combine them in a small bowl with 2 tablespoons of olive oil, the zest of the lemon, the zest of the orange, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of paprika.
Rub the garlic and citrus mixture generously under the loosened skin of the chicken and over the surface of the chicken.
Cut the lemon and orange into quarters. Stuff the cavity of the chicken with the citrus chunks, the remaining whole garlic cloves (crushed), 2 rosemary sprigs, and 3 thyme sprigs.
Tie the legs of the chicken together with kitchen twine and tuck the wings under the bird to ensure even cooking.
Place the chicken breast-side up in a roasting pan or oven-safe skillet. Drizzle the remaining 1 tablespoon of olive oil over the chicken and sprinkle with the remaining 0.5 teaspoon of salt.
Roast the chicken in the preheated oven for 15 minutes, then reduce the temperature to 375°F (190°C). Continue roasting for 70 minutes, or until the internal temperature of the thickest part of the chicken reaches 165°F (74°C).
