Ingredients

  • 2 pounds Russet potatoes
  • 6 pieces Garlic cloves
  • 2 teaspoons Olive oil
  • 4 tablespoons Unsalted butter
  • 0.75 cups Whole milk
  • 0.5 cups Sour cream
  • 0.5 cups Grated Parmesan cheese
  • 0.5 cups Shredded cheddar cheese
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Chopped fresh parsley (optional for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wrap the garlic cloves in aluminum foil, drizzle with olive oil, and roast in the preheated oven for 15-20 minutes until soft and fragrant. Once done, set aside to cool.

Step 3

While the garlic is roasting, peel and chop the Russet potatoes into evenly-sized chunks.
