  • 1 lbs Fresh green beans

  • 2 pieces Bay leaves
  • 2 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 4 cups Water
  • 2 tbsp Fresh parsley, chopped (optional)

Directions

Step 1

Rinse the red potatoes under cold water to remove any dirt and cut them into bite-sized chunks, leaving the skin on for texture.

Step 2

Trim the ends of the green beans and rinse them thoroughly. Set aside.

Step 3

In a large pot, combine the water, bay leaves, and 1/2 teaspoon of salt. Bring to a boil over medium-high heat.

Once the water is boiling, add the red potatoes and cook for about 10 minutes or until they are fork-tender but not mushy.

Using a slotted spoon, remove the potatoes from the pot and set them aside. Keep the water boiling, and add the green beans to the same pot.
