Directions

Step 1

Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

Wash the baby potatoes thoroughly and cut them into halves or quarters if large, ensuring even sizes for roasting.

Place the potatoes on the prepared baking sheet. Drizzle with 2 tablespoons of olive oil, season with salt and pepper, and toss to coat.
