Ingredients

  • 4 ears sweet corn
  • 2 cups cherry tomatoes
  • 0.5 medium red onion
  • 0.25 cup fresh basil leaves
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Remove the husks and silk from the ears of sweet corn. Bring a large pot of salted water to a boil. Add the corn and cook for 5-7 minutes until bright yellow and tender. Remove the corn from the pot and set it aside to cool.

Step 2

Meanwhile, rinse the cherry tomatoes and slice them in half. Peel and finely slice the red onion into thin half-moon shapes. Tear the fresh basil leaves into small pieces or leave them whole if they are small.

Step 3

Once the corn has cooled, use a sharp knife to carefully cut the kernels off the cob by standing the corn vertically on a cutting board and slicing downward.

Step 4

In a large mixing bowl, combine the corn kernels, cherry tomatoes, red onion slices, and basil leaves.

Step 5

In a small bowl or jar, whisk together the olive oil, red wine vinegar, honey, salt, and black pepper to make the dressing.

Step 6

Pour the dressing over the salad ingredients in the mixing bowl. Gently toss everything together until well combined and evenly coated with the dressing.

Step 7

Let the salad sit for 10 minutes to allow the flavors to meld together. Serve immediately or refrigerate until ready to serve.
