  • 6 medium Potatoes
  • 0.5 cups Unsweetened plant-based milk
  • 2 tablespoons Vegan butter
  • 1.5 teaspoons Salt
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion
  • 3 cloves Garlic cloves
  • 2 medium Carrots
  • 2 stalks Celery stalks
  • 8 ounces Mushrooms
  • 1.5 cups Cooked lentils
  • 2 tablespoons Tomato paste
  • 1 cup Vegetable broth
  • 1 tablespoon Soy sauce
  • 1 teaspoon Fresh thyme
  • 1 cup Frozen peas
  • 1 cup Frozen corn
  • 0.5 teaspoons Black pepper

Directions

Step 1

Peel and dice the potatoes. Add them to a large pot of salted water and bring to a boil. Cook until the potatoes are fork-tender, about 15 minutes.

Step 2

While the potatoes are cooking, heat olive oil in a large skillet over medium heat. Dice the onion, mince the garlic, and dice the carrots and celery. Add the onion and garlic to the skillet and sauté for 3 minutes until fragrant.

Step 3

Add the carrots, celery, and chopped mushrooms to the skillet. Cook for 5-7 minutes until softened.

Step 4

Stir in the lentils, tomato paste, vegetable broth, soy sauce, thyme, frozen peas, and frozen corn. Bring the mixture to a simmer and cook for 8-10 minutes, or until the mixture thickens. Season with 1 teaspoon of salt and 1/2 teaspoon of black pepper.

Step 5

Preheat your oven to 400°F (200°C). Drain the cooked potatoes and mash them with plant-based milk, vegan butter, and 1/2 teaspoon of salt until smooth and creamy.

Step 6

Transfer the vegetable and lentil mixture to a 9x13-inch baking dish. Spread the mashed potatoes evenly over the surface, using a spoon or spatula to create peaks if desired.

Step 7

Bake the pie in the preheated oven for 20 minutes, or until the mashed potato topping is lightly golden and slightly crisp.
