  • 4 burger buns
  • 4 lettuce leaves
  • 1 tomato, sliced
  • 1 avocado, sliced

Directions

Step 1

In a large mixing bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth but still slightly chunky.

Add the cooked quinoa, rolled oats, grated carrot, finely chopped red onion, minced garlic, and chopped parsley to the mashed chickpeas. Mix well to combine.
