Rinse the fresh mint leaves thoroughly and pat them dry. Roughly chop the mint leaves for easier infusion.
Peel the garlic clove and crush it lightly to release its flavor.
In a medium saucepan, combine the chopped mint, crushed garlic, and water. Bring the mixture to a boil over medium heat.
Once boiling, reduce the heat and simmer for 10 minutes to allow the flavors to infuse.
Remove the saucepan from heat and strain the mixture through a fine mesh sieve or cheesecloth, discarding the solids. You should have a clear, fragrant mint-infused liquid.
Return the strained liquid to the clean saucepan. Stir in the apple cider vinegar and powdered fruit pectin until thoroughly combined.
Bring the mixture to a boil over medium-high heat. Once boiling, add the granulated sugar, stirring constantly to dissolve.
Continue cooking the mixture, stirring frequently, until it comes to a rolling boil that cannot be stirred down. Let it boil hard for 1 minute, then remove it from heat.
If desired, add a couple of drops of green food coloring to the jelly and stir until evenly distributed.
Carefully ladle the hot jelly into sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the jar rims clean and secure the lids tightly.
Process the jars in a boiling water bath for 10 minutes to seal. Remove the jars and let them cool completely on a clean towel or cooling rack.
Once cooled, check that the jars are properly sealed. Store sealed jars in a cool, dark place for up to 1 year. Refrigerate any opened jars and use within a few weeks.
