Ingredients

  • 1 cup unsalted butter, softened
  • 0.5 cup granulated sugar (for crust)
  • 2 cups all-purpose flour (for crust)
  • 0.25 teaspoon salt
  • 4 large eggs
  • 1.5 cups granulated sugar (for filling)
  • 0.25 cup all-purpose flour (for filling)
  • 0.75 cup lemons, juiced (about 4 lemons)
  • 2 tablespoons powdered sugar (for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish or line it with parchment paper for easy removal.

Step 2

In a medium-sized bowl, cream together the softened butter, 1/2 cup granulated sugar, 2 cups of flour, and salt until the mixture forms a crumbly dough.

Step 3

Press the dough firmly and evenly into the bottom of the prepared baking dish to form the crust. Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden.

Step 4

While the crust is baking, prepare the lemon filling. In a large bowl, whisk together the eggs, 1.5 cups of granulated sugar, 1/4 cup of flour, and lemon juice until smooth and well combined.

Step 5

Once the crust has finished baking, carefully pour the lemon filling over the hot crust, spreading it out evenly.

Step 6

Return the dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and the edges are slightly golden.

Step 7

Remove the lemon bars from the oven and allow them to cool completely in the dish. Once cooled, transfer them to the refrigerator to chill for at least 1 hour.

Step 8

Before serving, dust the top with powdered sugar for a decorative and sweet finish. Cut into squares or rectangles and serve chilled.
