Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 medium zucchini, sliced into rounds
  • 2 large bell peppers, sliced into strips
  • 1.5 cups cherry tomatoes
  • 0.25 cup fresh basil leaves, chopped
  • 0.25 cup parmesan cheese (optional, for garnish)

Directions

Step 1

In a small bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to prepare the marinade.

Step 2

Place the chicken breasts in a shallow dish or zip-top bag and pour half of the marinade over the chicken. Reserve the remaining marinade. Let the chicken marinate for at least 30 minutes, or up to 4 hours in the refrigerator.

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with oil.

Spread the zucchini slices, bell pepper strips, and cherry tomatoes on the prepared baking sheet. Drizzle with the reserved marinade and toss to coat the vegetables evenly.
