  • 500 grams Chicken breast (thinly sliced)
  • 400 ml Coconut milk
  • 500 ml Chicken stock
  • 3 leaves Kaffir lime leaves (torn)
  • 2 tablespoons Fish sauce
  • 1 tablespoon Brown sugar
  • 150 grams Baby corn (halved lengthwise)
  • 1 medium Red bell pepper (thinly sliced)
  • 1 medium Carrot (julienned)
  • 200 grams Bamboo shoots (drained and rinsed)
  • 1 handful Fresh basil leaves
  • 1 handful Fresh cilantro (chopped)
  • 1 whole Lime (cut into wedges)
  • 2 cups Cooked jasmine rice (optional, for serving)

Directions

Step 1

Heat the coconut oil in a large saucepan or wok over medium heat.

Step 2

Add the red curry paste and sauté for 1-2 minutes until fragrant.

Step 3

Add the sliced chicken breast to the pan and stir to coat with the curry paste. Cook for 2-3 minutes until it begins to turn opaque.

Pour in the coconut milk and chicken stock, stirring to combine.

Add the torn kaffir lime leaves, fish sauce, and brown sugar. Bring the mixture to a gentle simmer.
