In a medium saucepan, combine the whole milk, heavy cream, and whole star anise pods.
Heat the mixture over medium heat until it just starts to steam, but do not let it boil.
Remove the saucepan from heat and let the star anise steep in the milk mixture for 30 minutes to extract its flavor.
In a medium bowl, whisk together the granulated sugar and egg yolks until the mixture is pale and slightly thickened.
Reheat the milk mixture until warm. Remove the star anise pods and discard them.
Slowly add the warm milk mixture into the egg yolk mixture while whisking constantly to temper the eggs.
