Ingredients

  • 6 pieces chicken thighs (bone-in, skin-on)
  • 4 sprigs fresh rosemary sprigs
  • 4 cloves garlic cloves, minced
  • 1 whole lemon, juiced and zested
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup chicken broth
  • 2 tablespoons unsalted butter

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Pat the chicken thighs dry with paper towels and season both sides with salt and black pepper.

Step 3

Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat.

Step 4

Place the chicken thighs skin-side down in the skillet and sear for 4-5 minutes until the skin is golden and crispy. Flip the thighs and sear the other side for an additional 2 minutes. Remove the chicken from the skillet and set aside.

Step 5

In the same skillet, lower the heat to medium and add the remaining 1 tablespoon of olive oil. Add the minced garlic and sauté for 30 seconds until fragrant.

Add the fresh rosemary sprigs to the skillet, followed by the lemon zest and juice. Stir to combine.
