Ingredients

  • 500 grams Chicken breast or thigh, finely chopped
  • 4 cloves Garlic, minced
  • 3 pieces Thai bird's eye chilies, finely chopped
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Oyster sauce
  • 1 tablespoon Soy sauce
  • 1 teaspoon Fish sauce
  • 1 teaspoon Sugar
  • 1 cup Thai holy basil leaves (or regular Thai basil as a substitute)
  • 4 cups Cooked jasmine rice (for serving)
  • 4 pieces Fried egg (optional, one per serving)

Directions

Step 1

Heat a large skillet or wok over medium-high heat and add the vegetable oil.

Step 2

Once the oil is hot, add the minced garlic and chopped Thai chilies. Stir-fry for about 30 seconds until fragrant.

Step 3

Add the finely chopped chicken to the skillet. Stir and break it apart as it cooks, ensuring it browns evenly. Cook for approximately 5–7 minutes, or until fully cooked.

Step 4

In a small bowl, mix together the oyster sauce, soy sauce, fish sauce, and sugar. Stir to combine.

Step 5

Pour the sauce mixture into the skillet with the chicken. Toss everything together so the chicken is evenly coated. Cook for 2–3 minutes to allow the flavors to meld.

Step 6

Add the Thai holy basil leaves to the skillet and stir-fry for another minute until the leaves have wilted. Remove the skillet from heat.

Step 7

Serve the basil chicken hot over steamed jasmine rice, and top each serving with a fried egg if desired.
