Ingredients

  • 500 grams minced chicken
  • 2 tablespoons vegetable oil
  • 5 cloves garlic
  • 4 pieces Bird’s eye chilies
  • 1 cup fresh Thai basil leaves
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon fish sauce
  • 1 teaspoon dark soy sauce
  • 1 teaspoon white sugar
  • 2 tablespoons water
  • 2 cups steamed jasmine rice

Directions

Step 1

Peel the garlic and finely chop it along with the Bird's eye chilies. Adjust the quantity of chilies depending on your spice tolerance.

Step 2

Heat the vegetable oil in a wok or large frying pan over medium-high heat.

Step 3

Add the chopped garlic and chilies to the pan, stirring quickly to avoid burning. Cook for about 30 seconds until fragrant.

Step 4

Add the minced chicken to the pan and stir-fry for 3-4 minutes, breaking up the meat with a spatula, until it is no longer pink.

Step 5

In a small bowl, mix the soy sauce, oyster sauce, fish sauce, dark soy sauce, sugar, and water to create the sauce.

Step 6

Pour the sauce mixture into the pan and stir well to coat the chicken evenly. Cook for another 2-3 minutes, allowing the sauce to thicken slightly.

Step 7

Add the Thai basil leaves to the pan and stir-fry for about 30 seconds, just until the leaves wilt and release their aroma.

Step 8

Remove the pan from heat and serve the Gai Krapow immediately over a bed of steamed jasmine rice.
