Ingredients

  • 1.5 cups Cornmeal
  • 0.5 cups All-purpose flour
  • 1 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 1.25 cups Water
  • 4 tablespoons Vegetable oil
  • 6 units Tomatillos, husked and rinsed
  • 1 unit Jalapeño pepper, seeded and chopped
  • 2 units Garlic cloves, minced
  • 0.5 cups White onion, diced
  • 0.25 cups Cilantro, chopped
  • 1 tablespoons Lime juice
  • 0.5 cups Chicken or vegetable stock
  • 0.5 teaspoons Salt (for sauce)
  • 1 tablespoons Vegetable oil (for frying tomatillo sauce)

Directions

Step 1

In a large mixing bowl, combine the cornmeal, flour, baking powder, and salt.

Step 2

Slowly add water to the dry mixture and stir until a thick batter forms. Let it rest for 5 minutes.

Step 3

Heat 2 tablespoons of vegetable oil in a large skillet over medium heat.

Step 4

Drop spoonfuls of the batter into the skillet, flattening them slightly to form patties.

Step 5

Cook the patties for about 3-4 minutes on each side, or until golden and crispy. Add more oil as needed to fry the remaining batter. Place cooked gahboo on a paper towel-lined plate and set aside.

Step 6

To prepare the tomatillo sauce, place the husked tomatillos in a saucepan and cover with water. Bring to a boil and cook for 5 minutes, or until the tomatillos soften.

Step 7

Drain the tomatillos and transfer them to a blender or food processor.

Step 8

Add the chopped jalapeño, garlic, diced onion, cilantro, lime juice, and chicken or vegetable stock to the blender. Blend until smooth.

Step 9

Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Pour the blended tomatillo mixture into the skillet and stir.

Step 10

Cook the sauce for about 5-7 minutes, stirring occasionally, until it thickens slightly. Season with 0.5 teaspoons of salt or to taste.

Step 11

Serve the crispy gahboo patties warm, topped with the tangy tomatillo sauce. Garnish with additional cilantro if desired.
