Ingredients

  • 2 large Sweet potatoes
  • 0.5 cup Unsalted butter
  • 0.75 cup Granulated sugar
  • 0.25 cup Brown sugar
  • 0.5 cup Evaporated milk
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 1 Unbaked pie crust

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Wash and peel the sweet potatoes. Cut them into large chunks and place them in a pot of boiling water. Boil until fork-tender, approximately 15-20 minutes.

Step 3

Drain the sweet potatoes and transfer them to a large mixing bowl. Mash them with a potato masher until smooth.

Step 4

Add the unsalted butter to the warm sweet potatoes and stir until the butter has melted and is fully incorporated.

Step 5

Mix in the granulated sugar, brown sugar, evaporated milk, eggs, vanilla extract, cinnamon, nutmeg, and salt. Whisk or use an electric mixer until the filling is smooth and well combined.

Step 6

Roll out your unbaked pie crust and fit it into a 9-inch pie dish. Trim and flute the edges as desired.

Step 7

Pour the sweet potato filling into the prepared crust, smoothing the top with a spatula.

Step 8

Bake the pie in the preheated oven for 50-60 minutes, or until the filling is set and slightly puffed. A knife inserted into the center should come out clean.

Step 9

Remove the pie from the oven and let it cool completely on a wire rack before serving.

Step 10

Serve as is, or with a dollop of whipped cream or a scoop of vanilla ice cream. Enjoy!
