Heat a large skillet over medium heat and add olive oil.
Once the oil is hot, add the diced onion and sauté for 3-4 minutes until softened.
Add the minced garlic and cook for another 30 seconds until fragrant.
Add the ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon as it cooks. Drain any excess fat if necessary.
Sprinkle the chili powder, ground cumin, smoked paprika, salt, and black pepper over the beef and stir well to combine.
Pour in the diced tomatoes (with their juices) and tomato sauce. Stir everything together and bring to a simmer.
