Ingredients

  • 500 grams Pumpkin (peeled and cubed)
  • 300 grams Sweet potatoes (peeled and cubed)
  • 125 grams Peanut butter (unsweetened, natural)
  • 500 ml Water
  • 1 teaspoon Salt
  • 1 teaspoon Sugar (optional, to taste)

Directions

Step 1

Peel and cube the pumpkin and sweet potatoes into bite-sized pieces.

Step 2

In a medium-sized pot, add the cubed pumpkin and sweet potatoes along with 500 ml of water.

Step 3

Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to low and cover the pot. Let the vegetables simmer for about 15-20 minutes, or until they are tender and easily pierced with a fork.

Step 4

In a small bowl, mix the peanut butter with a few tablespoons of warm water to create a smooth, pourable consistency.

Step 5

Once the vegetables are tender, add the peanut butter mixture into the pot and gently stir to combine.

Step 6

Season the dish with salt and, if desired, a teaspoon of sugar for a hint of sweetness. Stir well and let the futari simmer for another 5-10 minutes to allow the flavors to meld.

Step 7

Remove the pot from heat and let it cool slightly before serving.

Step 8

Serve warm as a main dish or as a side alongside rice or bread. Enjoy!
