Ingredients

  • 12 oz fusilli pasta
  • 1 lb shrimp (peeled and deveined)
  • 3 cups arugula (lightly packed)
  • 3 tbsp olive oil
  • 4 cloves garlic cloves (minced)
  • 1 lemon (zested and juiced)
  • 0.5 tsp red pepper flakes
  • 0.5 tsp salt
  • 0.25 tsp black pepper (freshly ground)
  • 0.25 cup parmesan cheese (grated, optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fusilli pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, cooking for 1 minute until fragrant.

Step 3

Season the shrimp with salt and black pepper. Add the shrimp to the skillet in a single layer and cook for 2-3 minutes per side, or until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.

Step 4

In the same skillet, add the remaining tablespoon of olive oil. Stir in the cooked fusilli, lemon zest, and lemon juice. Toss to combine, adding reserved pasta water a few tablespoons at a time to loosen the sauce if needed.

Step 5

Add the arugula to the skillet and stir until it wilts, about 1 minute. Return the cooked shrimp to the skillet and toss everything together.

Taste the dish and adjust seasoning with additional salt, pepper, or lemon juice as needed.
