Ingredients

  • 400 g fusilli pasta
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 100 g prosciutto, thinly sliced and chopped
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the fusilli pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of the pasta water before draining, and set the pasta aside.

Step 2

In a large skillet, heat the olive oil and unsalted butter over medium heat until melted.

Step 3

Add the finely chopped onion to the skillet and sauté for 3-4 minutes until soft and translucent.

Step 4

Stir in the minced garlic and cook for 1 minute, ensuring it does not burn.

Step 5

Add the chopped prosciutto to the skillet and cook for 2-3 minutes until slightly crisp.

Step 6

Stir in the frozen peas and cook for another 2 minutes until heated through.

Step 7

Reduce the heat to low and pour in the heavy cream, stirring to combine. Let the mixture simmer gently for 2-3 minutes.

Step 8

Gradually stir in the grated Parmesan cheese until the sauce is creamy and smooth. If the sauce is too thick, add a few tablespoons of the reserved pasta water to reach your desired consistency.

Step 9

Season the sauce with salt and black pepper, adjusting to taste.

Step 10

Add the cooked fusilli pasta to the skillet and toss to coat evenly in the sauce.

Step 11

Remove from heat and garnish with freshly chopped parsley, if desired.

Step 12

Serve immediately and enjoy your Fusilli with Prosciutto and Peas!
